Lucia Kaiser

Dr. Lucia Kaiser is a Cooperative Extension Nutrition Specialist in the Department of Nutrition at UC Davis. She has a PhD in Nutrition from UC Davis and is a Registered Dietitian. In her role as specialist, she provides training, research updates, nutrition education resources, and evaluation tools that can help those working in the community support Americans in adopting healthy lifestyles and improving the food environment. Dr. Lucia Kaiser's research interests include examining the impact of acculturation and food insecurity on nutrition in Mexican-origin populations; development and evaluation of nutrition education programs; and prevention of obesity and diabetes. Currently, she is lead of the Nutrition Team on the Niños Sanos, Familia Sana (Healthy Children, Healthy Family) project, which funded by the US Department of Agriculture to prevent childhood obesity in Mexican-origin preschoolers in Fresno County. This project involves a five year community-based participatory research intervention with nutrition education for families and school children and an economic incentive to purchase fruits and vegetables. She is also involved in the evaluation of several UC CalFresh (SNAP-Ed) nutrition education programs.
